Boozy Scotch Whiskey Muffins



Inspired by an Irish Coffee Muffin recipe from the Baking Bible, these muffins are made with scotch whiskey (and an extra glug for good measure). You get a little kick of coffee flavor and a lingering hint of alcohol. Doesn't sound bad for a cool Saturday afternoon!

2 cups plain flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup caster sugar
1 egg
1/2 cup heavy cream
80g melted butter
1/4 cup Kahlua
1/4 cup (and some more) scotch whiskey

Pre-heat oven to 200C. Grease muffin tins. Sift together dry ingredients. In a separate jug whisk together wet ingredients, pour onto dry and mix until well combined (be careful not to overmix). Spoon onto muffin tins until around 2/3 full. Place in oven and bake for around 20 minutes.


Serve hot!
